Heaven and Earth

Yes, it is a recipe - funny name isn’t it? Twice in my life I spent a year in Germany. Last year I travelled to Cologne. It’s a wonderful city. You can’t imagine how huge the Dome is. I tried to take a picture of this massive church but it wouldn’t work - it’s too big. The area around Cologne has it’s own cuisine. It is a very rustic way of cooking - easy and yummy. This recipe is almost like mashed potatoes, but just almost. Have a look:
about 2 pounds Potatoes
little less than 1 pound Apples
Salt, Pepper
2 big Onions
about 3 ounces of smoked Bacon
Liverwurst or blood sausage
You peel the potatoes and cube them. Also peel the apples (take the core out) and quarter them. Put potatoes and apples into a pot with as little water as possible - salt and pepper - boil them about half an hour. If there is too much water, decant it. Mash it.
Peel and dice the onions. Dice the bacon. Fry the Bacon and the onions in a hot pan.
Cut the Liverwurst into slices and fry them also in a pan until it’s crispy.
Mashed apple-potatoes on the plate, bacon-onions on top and the crowning is the Liverwurst.
This is a very old recipe from the 18th century. Why do they call it “Heaven and Earth”: The apples are symbolizing the heaven and potatoes are the earth.
